Pumpkin Pancakes for the Soul


Dinner tonight was perfect.

Pumpkin Pancakes using Trader Joe’s pumpkin pancake mix that my roommate had from a previous trip to NYC. Breakfast for dinner.  What could be better?

I’m not sure if this is seasonal, but next time you see it floating around TJ’s, snatch it up!  It’s delicious!

What’s that on my pancakes???  Greek yogurt and….

Wait for it…

BARNEY BUTTER!

Last week, I broke down and bought it online.  It arrived today, all 3 creamy delicious jars!  (Don’t worry, only two are for me.  One is for Rhoda.)

Not gonna lie, I’ve gone and dipped my finger in the jar multiple times today!  I need to cool it!  The expensive factor should be good enough motivation to make it last!

I’ve sort of over done it this week and today so I’m going to cut back on sugar this week.  I feel like when I eat sweets, I crave them more.  If I don’t eat them, I don’t really want them as much.  Anyone else feel the same?

Now back to homework, reading and randomly distracting myself on the internet!  Have a fantastic night!

P.S. You know you’re a food blogger when your boyfriend across the country e-mails you saying: “Costco has Almond Butter!” with this photo attached.

Gotta love him.

    Yummmm! Those TJ’s pumpkin pancakes are addicting — thanks for reminding me to stock up for the rest of the year. 😉 We have one box sitting the pantry and I’m thinking of hiding it for my own personal use haha.

    yes.. eating more sugar makes you crave even more… a vicious cycle that I’d prefer not to start with.

    I remember when I used a lot of added sweeteners or “sugar-free” products, I craved sweets more. I used to add a little bit of brown sugar to my oats every morning, but it’s been a while since I’ve done that. I did the other day and just the small amount I used made them too sweet! So I stick to letting the natural sugars of the banana and whatever toppings I use (raisins, dates, almond milk & greek yogurt, all-natural jam, etc) do the work. Tastes much better that way, anyway 🙂
    Are you trying to stay away from just artifically sweetened stuff, or sweet fruits as well?

      I don’t really use too many artificial sweetners, just 1 packet of splenda in my coffee each morning with the occasional sugar free pudding that I love (although I’m out of those now and don’t plan to buy more any time soon). I guess I’m trying to stay away from refined sugar in sweets (i.e. cookies, cake, candy). I have a huge sweet tooth! I’m okay with consuming sugar in fruit, I do the same with my oatmeal just let the banana sweeten it.

    Mmmmmmm, those pancakes look YUMMY! I’ve never had Barney Butter, but I’ve bought it for people as gifts. I hear it’s awesome. I really need to buy some. I was thinking about ordering some last week, I think I should go for it. 🙂
