Breakfast this morning was inspired by Heather. A few days ago I saw her post on quinoa granola and after yesterday’s quinoa breakfast, I knew I had to try it ASAP!
I had mind with greek yogurt and a sliced banana.
Seriously. Best homemade breakfast I’ve ever had! That’s saying a lot!
I tweeked her version a bit. Here’s my recipe for a single serving:
Coconut Quinoa Granola
inspired by Quinoa Granola
1/4 cup uncooked quinoa
1 tbsp flax
1 tbsp unsweetened coconut
1 tbsp agave
Rinse the quinoa. Combine all the ingredients and spread on a baking sheet. Bake at 375 degrees for 10-15 mins, stirring occasionally.
This was all sorts of delicious! The whole meal also had about 20g of protein! Kept me full for a pretty long time (5 hours?).
Definitely recommend it.
Ugh too much to read tonight! Have a good one!

I AM SO SAD SUFFICIENT GROUNDS IS CLOSINGGG. I hope Yogurt Park isn’t next. And when I go home I’m going to add this quinoa granola recipe in my list of Make-Everything-Karla-Makes.
Darn it!! I used the last of my quinoa in tonights dinner 😦 That looks so so good, I’ll have to go get more quinoa soon!!!
this looks really good and simple to prepare, i’ll definitely try it 😉
This looks amazing! I love having quinoa flakes in my breakfast porridge but I’ve never tried “real” quinoa before. I’ve seen toasted quinoa floating around in the blogworld but now I can’t wait to try your adapted quinoa granola creation!
Holy protein power deliciousness!! This looks great – and I’ve finally got Quinoa 🙂
Treat yourself to something fun this weekend – you’ve worked hard! I think a Moosewoods date would do 😉
Oh man. I gotta try it! I’m seeing it everywhere now!
Oh my gosh, yours looks SO good!!! I love the addition of coconut 🙂
That looks AWESOME!! I am so hunting down quinoa this weekend so I can make this…
I def. would have made this had I not wasted the last of my quinoa on quinoa milk! But, I’ll pick up some more 😀
This looks wonderful, love the idea of using quinoa in granola.
I just told my mom about this granola recipe. Looks so good! Love how the ingredients are simple.
Love how you don’t have to boil the quinoa first!
