It’s that day again (you know the one…), but I’m going to ignore it and just be a happy camper, because really that’s the best way to be. I’m generally a happy person. I smile a lot and can laugh at pretty much anything (i.e. when I fell down the stairs on campus a few weeks ago).
Sometimes I wonder if I should even bother doing serious things in life.
While I figure that out, I’ll stick to my hobby and potentially only real skill in life: baking.
Pear Cardamom Cupcakes
1 very ripe pear, peeled and finely chopped/mashed
1 tablespoon canola oil
2 eggs
1 tsp vanilla
1/2 cup sugar
1 1/2 cups cake flour
1/2 tbsp baking powder
1/4 tsp salt
2 pinches of baking soda
1 tsp cardamom
1/3 cup of milk
Preheat oven to 350. Combine mashed pear, oil, vanilla and sugar. Add one egg at a time until blended together. Add dry ingredients, mix until just combined. Gradually add milk, stir until well blended.
Pour batter into paper lined cupcake pan. Bake 15-20 mins. Makes 12 cupcakes. Once completely cooled, frost with Sweet Rose Frosting:
Sweet Rose Frosting
1/4 cup butter, softened
1-2 cups powdered sugar
1 tsp rose water
Whip together all ingredients. Frost cupcakes. Enjoy!
I love rose flavored sweets. They make me want to smile.

haha – I’m so that girl too. I can’t help but to laugh at myself all the time. Open doors the wrong way…fall UP stairs…not realize theres a drop down and all of a sudden tripping over my own feet…you know the drill 😉
These cupcakes certainly look amazing, though. I’ve yet to bake anything pear flavored for some reason, though! Strange – I love pears. but have never had anything rose-flavored. Man – two things I need to try thanks to this post!

I'm so interested in rose water! I have no idea how a rose would taste…it sounds good though 😀
I’ve never tried rose water icing but it sounds way better than regular icing. Does it taste like how it smells? Because that would be pretty cool.
Cardamom is so good though I believe that many people aren’t a fan. Too bad because it’s so flavourful! I can imagine that it works well with pear. Your cupcakes look too good!!!
I’ve never heard of rose water. 😯 I’m getting sad thinking about the ratio of foods and flavors to the amount of meals/days to eat in a lifetime, LOL. 😀 I want to try them all!
