Getting Back on the Healthy Train and Starting Crossfit Again

I live and die by schedules.  I love checklists, to-dos and deadlines.

I love to know exactly what I have to done and when it has to be done.  In work, that’s great.  I get things done quickly.  In life, it means when my schedule gets thrown off, I have a hard time maintaining sanity.

Moving to the Bay Area has really thrown off my schedule.  It used to be I’d wake up at 5:30, be at the gym by 6am (or out for a run), be at work by 8:15.  My morning schedule was great.  I was used to it.  I was so productive.  Exercising in the morning makes me feel great.

Then the past few months happened.  We went to Mexico and Guatemala, we moved and got settled and all that went away, especially because I work remotely while I look for a new job up here.

Moving is hard.  It’s hard to get used to a new place and get your bearings.

So while all that was happening, I basically ate terribly and didn’t exercise.

But all that said, it’s finally all coming together. But it’s not magic, it takes work (and contrary to what other blogs like to tell you, getting healthy is not always fun).

I’m figuring out my schedule.  I also found a new Crossfit.  I’ve been 3 times so far and let me be perfectly honest with you, going to a new crossfit is scary.  You’re not sure what to expect, because every box is different, and people are different.

I think I’ve lucked out, because everyone has been extremely nice.  But it’s still scary, and I miss my old box with my set of friends and coaches that I like.

I had to make myself go this morning.  I was dreading it, because I was scared.  But once I got there and did the workout, I had a great time (p.s. my back squat 1 rep max has gone down by 22lbs, I’ve got work to do).

The key for me to stick with it is to just make myself do it.  I don’t have my running buddy anymore, so I need to find other ways to make it work.  My solution: Nike it.

Then there’s eating healthy.  I’ve struggled, because cheese and cake are delicious.

So just like how I have to force myself to exercise, I currently have to force myself to eat well.  I’m trying, because I pretty much want to eat Chinese food and cake for every meal.  I cleaned out my fridge and left only non-processed foods and made normal meals for myself trying to balance protein and carbs.

Healthy and colorful meals can be awesome.  They just take some getting used to, because I’m convinced your palate changes after eating a certain way for a few weeks.  Being healthy is important and let’s be honest, sometimes it’s not fun and you just want to eat cake (I can’t be alone in this sentiment).

There’s a time for cake, but right now, it’s time for vegetables.  And let’s not forget, I’m getting married next year, now is not the time to start gaining weight.  I’m also not into crash diets, so probably a good idea to just maintain my weight for the next year (or lifetime?).

Cauliflower Pizza Crust

I’m thinking of changing my blog subtitle to:  A blog about balancing health with a constant desire to eat cake.

Because that’s really what it’s about.  I love baking and making deliciously fatty food, but I spend the better portion of my life trying to figure out how to be healthy and fit.  It seems like the two just don’t go together, but I think I’m making it work and this is a prime example.

It’s not “skinny” anything.  It’s Cauliflower Pizza.

I’ve been seeing Cauliflower Pizza crusts all over the internet for a while.  Cauliflower is slowly becoming the new Kale.   You know, the healthy thing that we all need to be eating all the time.  I still eat kale all the time, but I’m seriously enjoying finding new ways to cook with cauliflower.  Let’s let this food trend continue!

Cauliflower Pizza

12 oz cauliflower (1 bag from Trader Joe’s), grated
1/2 cup percorino romano cheese, finely grated
2 eggs
salt and pepper to taste1/3-1/2 cup pizza/pasta sauce
1 cup Monterrey Jack Cheese, grated
Toppings: Caramelized Onions, Sausage, Any other toppings

Pre-heat oven to 425F.

In a bowl, mix together grated cauliflower, percorino romano, eggs salt and pepper.  Press onto a parchment paper-lined baking sheet.  Try to get it as thin as you can so the pizza turns out nice and crisp.  Bake about 15-20 minutes or until lightly golden.

Remove from oven, spread with pasta sauce, then sprinkle with cheese and desired toppings.  I used pre-cooked sausage, caramelized onions, and artichokes.  Put back in the oven for another 10-15 minutes or until your pizza is nice and crispy and golden!

Allow to cool a few minutes.  Then serve and enjoy! This recipe makes one large pizza.

I was a fan of this.  But let’s be clear.  Just like the two-ingredient paleo pancake DOESN’T actually taste like a pancake, this isn’t REALLY like pizza.  That said, it’s still super tasty!

Jesse and I agreed it really does taste like cauliflower and egg, which we were pleased with.  I think if I had pressed it more thinly throughout, it would have tasted better because the crispy edges were awesome!

So be sure to press it really thin when you try this!

I definitely want to try making this again.  Next time I think I’ll do caramelized onions, goat cheese with prosciutto and arugula.  Sounds awesome right?  This is a good template recipe that you can adapt to fit basically any flavor profile, while staying a little bit healthier.

New Years Resolutions or Why I Won’t Be Making Any This Year

This morning I woke up and felt fat.   So I went through every fad diet in my mind and for about 5 minutes resolved to be a vegan, paleo, juice cleanser who Crossfits and runs marathons in 2014.

Then I walked back into reality and decided that’s just dumb.

Every so often I feel the need to make drastic changes in my diet and time and time again it all reverts back to the same thing: don’t eat so much and move yourself.  The beginning of the year is the perfect time to pine over diets and dream about the possibilities of being skinny if we just cut out a few major food groups.

Everyone is in diet mode and we all decide we’re going to never eat another cookie again our lives.  Then we go on Pinterest, see this photo

and get hungry and eat 15 cookies.  So let’s just skip that part and just try to be healthy.

That’s my resolution (slightly rephrased): eat when hungry, stop when full, move yourself.

But resolutions aside, I do have some goals for this New Year.  In 2014, I’d like to:

  1. Be able to do at least 1 unassisted pull-up and 10 unbroken double unders.
  2. Read at least 14 books.  Currently reading: Let’s Explore Diabetes with Owls by David Sedaris.  Enjoyable. Up next will probably be: Is Everyone Hanging Out Without Me? (And Other Concerns) by Mindy Kaling.  After that… who knows.  But I took a step in the right direction and made a Good Reads account.
  3. Make cheese (something I said I would do last year but did only once).
  4. And bread! All sorts of bread would be fun!

  5. Go on vacation again.  Now is the time to travel. Peru and China were awesome the past two years.  I’d love to go to Thailand, Costa Rica, or Jamaica.  But I guess I’d compromise on this goal and save money instead.  We’ll see…
