Brinner Party: Build Your Own Breakfast Burrito

I’m a huge fan of breakfast for dinner.   I probably have breakfast for dinner at least twice per week.  The beauty of breakfast is that it’s flexible.  While usually my breakfast for dinner (aka Brinner) is usually pretty simple (i.e. eggs and beans), you can get full on fancy with brinner.  I’m glad to know other people share my affinity for Brinner, especially Eggland’s Best.

Eggland’s Best is an egg company.  You might have seen them around the grocery store or on Twitter or Facebook.  I had never tried their eggs before but when they offered some up to throw a “Brinner Party,” I was all over it.

I mean who can say no to eggs? They’re a little bit great (don’t forget how awesome Egg Salad on a Hot Dog is!)

Given my love of Eggs, Brinner and Food Parties (Hi, remember Peanut Butter Party and Chicken & Waffles?), a Brinner party was a natural next step.

We all know any good dinner party needs:

  • A drink
  • An Appetizer
  • An Entree
  • Dessert

I hit 3 out of 4 with this party.  You won’t believe this but I actually skipped dessert! (Who am I?!?!)

I had high hopes for dessert, but didn’t follow through because everyone was too full from the menu.  Must have been all those eggs! (PROTEIN! It keeps you full!) <— This is NOT me making a health claim… not that I ever do.

This brinner party also coincided with the World Cup Final.  So of course, any sporting event (and brinner party) needs a good cocktail.  I went with peach bellinis with fresh homemade peach puree:

Super simple.  Peel some peaches, throw them in the food processor (or vitamix) and mix with your champagne of choice.  Then ta-da! Serve up! No added sugar just peach and alcohol.

With cocktails served, first up were the appetizers.  Since the world cup was going on, I decided to keep it sports friendly.  I don’t know about you, but sliders are one of my favorite sports-watching-foods.  So how about some breakfast sliders?

After the game and some chatting and hanging around, it was time for dinner.

When it comes to dinner parties, I’m a big fan of interactive meals.  I think my friends are starting to get tired of it, but I love having make-your-own-____ meals.  It takes the pressure off of the host to have everything timed perfectly and it also lets guests pick and choose what they like (in the event your guests are picky or have food allergies).

When I was brainstorming the perfect Brinner party meal that would be tasty, fun and hearty, I couldn’t stop thinking of burritos.  So that’s what she wrote… Build Your Own Breakfast Burrito Brinner Party!

Fig-Arugula-Goat Cheese Sandwich with a side of Kale

I have a confession.

I hate cooking at night.

Not always but most of the time.

Most days, I wish someone would cook dinner for me so that I wouldn’t have to touch the kitchen past 2pm.  I guess that’s not totally true.  Cooking for others at night is fun.  Cooking for myself, not so much.

Baking in the morning is my favorite.  Making elaborate lunches runs a close second.

Like this guy.

No no, that’s not a boring sandwich.  Don’t be fooled, it’s amazing and perfect in every way.  I plan to eat it for the next few days. You should try it too.  Here’s what you do to make 1 wonderful lunch (or dinner I suppose):

Fig-Arugula-Goat Cheese Sandwich with a side of Kale

2 slices of bread (I used oat nut something or other), toasted
1-2 oz goat cheese
2-3 figs, sliced (I have a tendency to eat pieces as I slice, so 3 for me)
1 handful of arugula
1/4 cup balsamic vinegar
1/2 tbsp olive oil
2-3 cups of chopped kale
1 garlic clove
salt and pepper to taste

Place 1 sliced fig and 1/4 cup of balsamic vinegar in a saucepan over medium heat.  Once it comes to a boil, lower the heat and simmer until reduced (about 5 minutes, you can do this while you prepare the rest of the sandwich).

Spread the goat cheese on the toasted bread (either on one side or both, I did one side).  Lay the sliced figs one side, the arugula on the other.  Once the balsamic reduction is ready, drizzle it on the figs and arugula and your sandwich is ready.

Next make the kale, heat oil in a pan to medium/high.  Add kale, garlic, salt and pepper and stir around.  Add some water if it’s too dry.  Once the kale has cooked (but is still pretty bright green), top with remaining (or just some, if you don’t like things too acidic) balsamic reduction and cooked figs.

Crumble some more goat cheese over it, if you’d like, and serve along side your sandwich!

Best eaten at lunch but works well for dinner too… If that’s your thing…  And if it is, come over and make me dinner!

Birthday Cake in a Jar

Remember how I made a blueberry pie for myself instead of a birthday cake?

I couldn’t really pass up making a birthday cake.  Luckily, two friends had birthdays last week as well.  We had what I like to call a “collective cumpleaños” celebration and I wanted to make a cake.  Here was the problem.  Our collective gathering involved a bonfire on the beach.  Not really conducive to a huge layer cake.

Instead, I had an idea.  Birthday cake in a jar.

I made it with layers of spicy chocolate cake, spicy chocolate mousse and cinnamon buttercream.  Then I put in a jar, wrote happy birthday on top, taped a candle to it and put a bow on top.

Instant and highly-portable gift!

Ok I promise I’ll try to stop putting things in jars for a while.  My sister gave me an ice cream maker for my birthday.  That might be my next kick.

Blueberry Pie and a Giveaway

Because yesterday was my birthday

and because I made an amazing blueberry pie.

No really, I was pleased.  Who needs a birthday cake when you have blueberry pie.

I think the trick is to make it a few days in advance and freeze it then bake it when it’s still sorta frozen in order to keep the crust from shrinking.
