Coconut Mint Cooler

I signed up for a half marathon.  Somehow I thought it was a good idea to run 13 miles.  So here it goes.  It’s not til November, but training has commenced (luckily, I run with Allison from Sweet Potato Bites and she keeps me going).

This morning I ran 8.  I’ve noticed I’ve been having some issues with hydration after these longer runs, especially since we’ve been having ridiculous humidity in southern California and I sweat like a whore in church.

I know coconut water is great for hydration, but sometimes, just plain coconut water is boring.  Sometimes you need to get a little bit fancy.  If you’re feeling fancy and dehydrated, I have the perfect drink for you.

4 cups coconut water
Juice of 2-3 limes
12-15 mint leaves

Blend together all ingredients.  Refrigerate until ready to use.  Serve over ice (or with a dash of rum).

I’m pretty pretty much convinced that this would also make a great mixer.  I think it’d go great with rum… like a coocnut mojito! Would you say no to that?

Or if you wanted to keep be alcohol-free, mix with some club soda to give it a little fizz.

Either way, you’ll feel fancy drinking this and knowing you’re on your way to full hydration without any added sugars, chemicals or crazy ingredients.

Healthy Chocolate Smoothie

I love dessert, and I love feeding people dessert almost as much (or maybe even more) than I like eating it myself.  But some days,  I have a major guilt trip.  Today is one of those days.  I know sugar is terrible for your health.  I shouldn’t eat so much of it, and sometimes I feel guilty that I feed my loved ones baked goods so often.

I generally think I’m a pretty health-conscious person,  but then I turn around and make things like this:

I know dessert makes me happy, but I also know I shouldn’t be eating it all the time so I give it away.  So pretty much I’m a jerk, a jerk that pawns off things that are too unhealthy for her to eat onto other people.  And when jerks feel guilty, they turn to fruits and vegetables.

I swear this has nothing to do with the fact that I’m about 293048292 years late to the party and finally watched Fat, Sick and Nearly Dead and this article I read in National Geographic about Sugar.  That documentary didn’t convince me that I need to start juicing, but it did remind me that fruits and vegetables are always a good idea. The sugar article just reinforced my original idea that I need to eat less sugar. I’m not a nutritionist, but it seems like juices are lacking fiber and all the healthy things you get from the skins of fruits and vegetables. No? So instead of juice, I’m sticking to smoothies and less sugar.

I’ve been having green smoothies for years.  My normal go-to combination was strawberry, banana, spinach.  But I decided to try a new combo to help me get past my enormous cravings for big handfuls of chocolate chips in the evenings.  It’s a bad habit.  So let’s replace it with something better:

Healthy Chocolate-y Smoothie

1/2 frozen banana
1/2 cup frozen mango chunks (I eye ball it)
1-2 cup frozen spinach (I really just grab a huge handful and shove it in the blender)
1 date, pitted
1 1/2 tbsp unsweetened cocoa powder (or more if you want it more chocolate-y)
1 cup ice
1/2-1 cup water or almond milk (this might vary)

Place all ingredients in the blender and blend until smooth.  In my Vitamix, I don’t need that much water and I can get it to be pretty thick.

I actually eat it with a spoon!  Note: This makes one large smoothie for one person.

The key here is really the cocoa powder.

You get the chocolate-y flavor without all the sugar.  The sweetness here comes from fruit, particularly the date.

It’s not like eating a Wendy’s frosty. Let’s be clear.  It’s not.  But it’s pretty darn tasty and it definitely helps me get my chocolate fix in a much healthier way.

Strawberry Basil Gin & Tonic and The Weekend

After a long week, sometimes you need a drink.  This week was pretty rough.  On Thursday, I pulled a muscle in my lower back while working out.  Someone suggested I have a drink to relax the muscles.  Worth a try.

I’m not a big drinker, but I love a good gin and tonic.  And you know me, I love to spice things up.  So I decided to give give it a few little tweeks and this is what I came up with:

Strawberry Basil Gin and Tonic

2 oz gin
2 strawberries, sliced1-2 basil leaves, chopped
4-6 oz tonic water
twist of lime

Muddle together the strawberries and basil.  Add the gin and mix together.  Pour over ice.  Squeeze in some lime juice, top with tonic water and serve.

Serving it in a mason jar is totally ok.  This is about relaxing.  Mason jars are laid back.  They’re also for hipsters or people who are too cheap to buy real glasses.  Glasses are also allowed.  They’re fancier.

Either way, get your sip on.

So that was Friday.

Saturday, I met up with Allie from Sweet Potato Bites.  We realized we live like 2 miles away from each other and thought we should probably meet up for a doughnut.

Because that’s what foodies do.  So we headed to Sidecar Doughnuts and I had a tasty yeast doughnut with chocolate and salt.

Sooo good.  Allie was awesome!  I’m excited to have made friends with a cool blogger.  After our 2 hour chat session, I headed to a thrift shop where I bought exciting things for my upcoming Chicken and Waffle party.

You heard that right.  Chicken and Waffles party.  It’s going to be epic.  I’ll tell you more about it when it rolls around.

Sunday, was also awesome.  Well that’s today.  Jesse and I are celebrating our 1.5 versary, because we’re cool like that.    So we had brunch at Public Kitchen in The Roosevelt Hotel in Hollywood.

I bought a Travel Zoo deal for brunch for two.  While it was nice scenery, and the bathrooms were awesome…

Brunch was meh.  It ended up costing $55 for a glorified continental breakfast.  It probably doesn’t help that I don’t really like buffets.  I’d much rather just get a plate of food.  Jesse and I both don’t eat enough to feel like buffets are worth it.  Nothing was omg-amazing-must-have.  But oh well.  It was still a nice time.

After brunch, we headed back to OC.  Jesse needed to work and I did arts and crafts…

Now we’re enjoying cucumber-basil water and trying to figure out what to have for dinner (or am, while Jesse works).

Overall, it’s been a great weekend.  Can’t complain, not even about the fact that my back hurts.  Maybe I need another drink? What do you think?

Glamorous

Little known fact about me: I love spy movies.  A lot.

Last night, I saw

I was entertained.  Probably a little over the top (okay REALLY over the top) but better than a lot of other movies I’ve seen recently.

For some reason, movies always portray spy life as pretty glamorous.  It’s probably not, but it’s still my secret dream job.  In the meantime, I’ll fake the glamorous lifestyle.

For example: Last week, the Biscotti Queen and I made a glamorous cocktail.

I scoop of your sorbet of choice (we used grapefruit)

Top it off with champagne.

Let it fizzle.

Okay so life’s not going to be that glamorous the next few weeks.  I’m moving twice in the next 2 weeks!  Not fun! But before that there’s the weekend!  Have a good one!
