30 Day Paleo Challenge: Days 3 & 4… Epic Paleo Dinner

Cauliflower is totally having a moment.

I’m obsessed.  A few years ago, Kale was all the rage.  Now it seems like Cauliflower is all over the world (and by the world I clearly mean the big world of food blogs and Pinterest).  Since I’ve been eating the same things for breakfast and lunch that past few days (Day 1 and Day 2), I decided I needed to make something awesome for dinner and cauliflower would be included, because all the cool kids are doing it.

Jesse and I have dinner together pretty much every Wednesday night, so this seemed like a good opportunity to show off my paleo cooking skills.

Chicken and Sage Mushrooms over Cauliflower Puree

inspired sorta by Real Simple

1 head of Cauliflower, chopped
2 slices of bacon
3-4 boneless skinless chicken thighs*
10 oz sliced mushrooms (I used baby bellas)
1 tbsp fresh chopped sage
1 clove of garlic, chopped
1 tbsp chopped parsley
salt
Pepper
Garlic Powder

Put cauliflower in a pot with some water to boil.  Boil about 20 minutes or until tender.

In the meantime, in a skillet, cook 2 pieces of bacon.  Remove from pan and allow to cool once cripsy, chop then set aside.  Season chicken with salt, pepper and garlic powder to taste.  In the same skillet, cook the chicken until done (about 5-6 mins per side).

Remove chicken from pan and turn off heat.  Reserve that pan to cook the mushrooms in, but make the cauliflower puree.  Drain the cauliflower and put in the food processor with salt and garlic powder.  How much?  It depends on your palette.  I use a good amount of both (maybe 1/2 tsp? start there then taste it add more if necessary). Puree until smooth.

Next make the mushrooms, turn the heat back on to medium and throw the mushrooms in the pan.  Cook about 5 minutes or until almost cooked through.  Add sage, garlic, salt and pepper and cook for another minute or two.  Add in bacon, toss and turn off heat.

Next assemble the dish.  Lay some cauliflower puree on a plate, top with a piece of chicken, some mushrooms, then sprinkle with parsley and serve!  This will serve 2-3 people, depending how hungry they are

*I fit more pieces of chicken in the pan and made about 6 so that I had leftovers.  You can do the same.  This will make meals a lot easier for the rest of the week!  But if you want to make this for 2, you can also just make 2 pieces of chicken and it all works out fine 🙂

Yes.  It is.  And super tasty too.  I felt totally gluttonous while eating this!

Paleo Challenge Update:

Day 3:

Day 3 was the hardest so far, but even then, it wasn’t so bad.  I was just hungry and munchy (maybe a little stressed?).  Luckily, I’ve been overpacking when it comes to food at work.  I also took a bag of almonds to stash at my desk.  I’m glad I had them yesterday, because it was Bagel Wednesday at work…

I ate my lunch with a stack of bagels in the background.

I stayed strong though! No bagels!

Day 4:

Better than Day 3.   Breakfast and lunch were the same as above.

For dinner, I came home and had leftover cauliflower puree with some mushrooms, the remains of a week-old rotisserie chicken (I really hate throwing food away!), a banana with almond butter and some mango chunks to kill my craving for cake.

Now I need another epic dinner idea for tomorrow!  Any suggestions?

30 Day Paleo Challenge: Day 2

It’s only been two days, but I think during the week, this challenge won’t be that bad for a few reasons:

  1. I have a schedule, and I’m busy at work.  That means I’m not sitting at home boredom eating.  Most days I look at the clock around 12:30 and think How is it past noon already?  Time flies.
  2. I’m totally ok with eating the same thing everyday for breakfast and lunch.

I had yogurt, banana and almond butter every single day for months.  Having a paleo pancake and a green smoothie is perfectly fine by me.  You’ll probably get tired of reading about it before I get tired of eating it.

Day 2 lunch was pretty similar to Day 1, and Day 3 (today) will be exactly the same as Day 2.

Ground Turkey with leftover sweet potato “home fries” and cabbage with lime and salt (I love this combo! My mom made it all the time when I was little and I’ve loved it ever since).  I also packed an apple, some strawberries and some cuties.

My strategy is to overpack snacks to avoid having one of those moments where I feel like eating the world but there’s nothing healthy/paleo to eat.  So far it’s been fine, I ended up only eating one of the cuties and had the apple after dinner.

For dinner, I was at my sister’s house, because my nephew is just so stinkin’ cute it was time to pay them a visit.

After Graham had his dinner of breastmilk (or formula? I actually have no idea), we had shrimp with butternut squash.  Pretty tasty.

So that way Day 2.  Let’s hope Day 3 goes as well as the past two.  I have a potentially EPIC dinner planned tonight.  Or it might be meh.  I’ll keep you posted!

30 Day Paleo Challenge: Day 1

Today is Day 1 of the 30 Day Paleo Challenge!

I’m psyched.  I’m sure my family, friends, co-workers, twitter followers, etc. are tired of hearing about it already, but I’m into it.

This morning I felt a little unprepared to begin the challenge.  Not because I wanted a hamburger, but this morning after I made my green smoothie and paleo pancake for breakfast…

I realized I was out of vegetables.  I put away an entire bag of Costco spinach by myself in less than a week.

Womp. But I made due with what I had.

Last night I cooked some ground turkey with onions and peppers.  Today I mixed it with frozen peas and carrots then topped it with avocado (ended up eating 1/4).  For a filling, paleo-friendly lunch.  I also had a carrot and some strawberries.  I packed some cuties in case I got hungry, but I only had 1 (wasn’t even hungry just wanted something sweet).

Looking at my lunch, it reminded me of when I was in grad school and I was too busy to cook and too cheap to buy lunch so I would pack a clif bar, a carrot and an apple and call it a day.

Today was slightly different.  My lunch today was definitely more filling.

Around 6pm, I thought it’d be a good idea to get dinner started.  If there’s one thing I’m realizing it’s that this paleo challenge is going to make me have an actual dinner.  Ordinarily, I’m used to just sort of having snacks for dinner (i.e. tortillas with beans and cheese, or random bites of left overs with a handful of chocolate chips… not my finer moments).

So today I decided to keep up with the use-what-you-have trend.  Over the weekend, since I baked a million pies (or 3), I had 5 egg whites that needed to get used.  So dinner was themed around that…

Scrambled Egg Whites with Peppers and Onions and Spicy Sweet Potato “Home Fries”

Now these home fries aren’t really home fries.  They’re just super quick sweet potatoes that I think are tasty.

What You’ll Need to serve 1-3 people:

  • 1 large sweet potato
  • 1/4 onion
  • 1 mini sweet pepper or 1/4 red/yellow bell pepper
  • Salt, Pepper, Cumin, Chili Powder, Paprika, Cayenne

Step 1: Microwave sweet potato until cooked (depending on size 5 mins ish? I think mine took 6 minutes)
Step 2: Chop some onions and peppers and add to a pan with a bit of oil.
Step 3: Chop the sweet potato into chunks and add to the pan with some salt, pepper, cumin, chili powder, paprika and cayenne (all to taste).
Step 4: Turn up the heat, once the sweet potatoes are browned and sort of crisp, serve with your scrambled egg whites!

Ta-da! Dinner!  I ended up topping it with the 1/4 of the avocado that I didn’t eat earlier.  Pretty tasty.

I won’t lie.  I really wanted to add ketchup to this mix, but alas, not paleo friendly.  Also this was a HUGE meal.  5 egg whites is a lot of egg.  Just saying.

30 Day Paleo Challenge: The Countdown and a Paleo Pancake

But the last few days I’ve been easing into it.

Breakfast was full paleo this morning.

Green Smoothie + Paleo Pancake+ Almond Butter + Coffee

Let’s talk about the Paleo Pancake.

I discovered this on Carrots N Cake a while back and have been eating it for a few months.  I’ve seen it around the web as well, but I finally found the combo (and method!) that I think is the tastiest.

Paleo Pancake

3/4 of a banana large banana (or 1 small)*
1 egg
splash of vanilla extract

Slice the banana and put it in the magic bullet cup.  Crack the egg in there as well.  Add the vanilla.  Blend until smooth.  Alternatively you can mash the banana and just mix it in a bowl, but I found that the magic bullet really made it smoother and tastier.

Heat a small skillet (sprayed with a bit of cooking spray) over medium heat.  Add the batter and turn the flame to low, cover with lid.  Cook about 3-4 minutes until you shake it and it no longer giggles (it takes a bit of time).  Flip and cook for an additional minute or two.  Turn onto a plate and slather with almond butter!  Delish!

*the other 1/4 of your banana can just be sliced on top or used in a green smoothie!  I found that if you put too much banana then your banana to egg ratio is off and the pancake breaks.  I’ve also tried with 2 eggs and that just tastes too eggy to me, but try it if you’d like!

I used to think my Magic Bullet was totally useless, but now I’m finding new uses for it!

Also I should note… Please please please don’t expect this to taste like a regular pancake.  That’s just impossible.  But it is tasty and definitely worth a try!  Not to mention that it kept me full for a really long time.

For lunch, I packed some spinach salad with peppers, pickles and avocado, left over rotisserie chicken, and cuties.

For dinner, I’m headed out.  I semi-feel like I’m going out of mainstream eating with a bang.  This week is OC Restaurant week.  So I’m going to dinner to celebrate some friends’ birthdays at Newport Landing.

Surprisingly the thing I’m looking forward to is NOT dessert!  This Potato Wrapped Atlantic Salmon sounds aaaa-mazing.

30 Day Paleo Challenge: Prepping

So I’ve realized I eat more dairy than I thought I did or maybe that’s just what’s left in my fridge to consume.  So I’m finishing out my non-paleo foods before the 30 Day Paleo Challenge

I’m used to eating yogurt for breakfast.  So today was pretty typical…

Green smoothie (1/2 banana, 6 chunks of frozen mango, lots of spinach, and water) + the other half of the banana and a Chobani.

Lunch consisted of more leftovers…

An apple for a snack.  Then random boxed Potato Leek soup + cottage cheese with tomatoes and hot sauce on a tortilla.  That combo was wayyyy more delicious than I thought.  Since I still have a ton of cottage cheese left, that will be lunch tomorrow too.

After work, I headed to Costco to stock up on some stuff.

Bananas, Almond Butter, Marinara, Spinach, Eggs, Clementines, Mini Peppers, Rotisserie Chicken, Ground Turkey, Avocados.   I wish that box was filled with Stella Rosa, but no, that’s how I brought home my chicken…

Honestly, the list wasn’t that different from what I normally buy.  The only difference is ordinarily I would buy Greek Yogurt and Cottage Cheese and probably some other type of cheese instead of any type of meat.

One of the criticisms I hear about  Paleo is that it’s expensive.  I spent $56.  That might be a little more than I would normally spend at Costco, but I’m thinking that ground turkey will last a while, and it was the most expensive item (4 packs for $17).

I’ll hit up the grocery store for some spaghetti squash later this week, but other than that, not a whole lot more.

I’ll keep track of the costs just out of curiosity.

30 Day Paleo Challenge

I’m a firm believer in trying new things.  I’m also of the belief that if you’re not happy with something, change it.  So right now, these two beliefs are coming together to form this 30 Day Paleo Challenge.

If you are at all into health/fitness, you’ve probably heard about the Paleo diet and the cult of Crossfit.  I hate to say it but I’ve drank the Kool Aid.  I think Crossfit is totally fun.  I feel like a total bad ass every time I do a power snatch.  But that’s not why I want to give Paleo a try.

Let’s be honest.  We all know I have a sugar problem.

While I like to joke about it, it’s something I don’t like about myself.  I wish I could pass up a piece of cake, or look at a cookie and not really want it.  So instead of complaining about it, I’m going to try to do something to change it.

30 days. 

That’s not forever, but it might be long enough to help me break a less-than-desirable habit.

I have a few that I’m committed to baking for events, but other than that I’ll try to feature Paleo-friendly recipes.

I don’t want to call this a diet, because I hate diets and I’m not necessarily desperate to lose weight.  What I am tired of is constantly wanting something sweet after lunch and dinner.  So this isn’t a diet.  Instead, I’m calling this a challenge and an experiment.

I’ve read tons of things about how Paleo has helped people crave less sugar and feel more energized.  Seems worth a shot to me.

I fully expect this to be challenging, and maybe even suck at first.  I’ve drank coffee with milk and splenda/sugar substitute every morning for as long as I can remember (literally since I was probably like 8 years old).  That will probably be the biggest challenge, but I’m willing to give it a try.

I’d love to have clearer skin, fewer headaches, fewer cravings and more energy!  Who wouldn’t?  I’d be lying if I said I wouldn’t be happy to lose a few pounds too.

I’ve got nothing to lose (except maybe a few pounds), so why not give it a try?

This week, I’m easing into it.  Finishing up any beans or cheese left in my fridge (because while I want to be healthy, I also don’t want to be wasteful) and transitioning to a Paleo lifestyle.

The full fledged challenge begins on Monday, March 4th!

Roasted Pineapple with Cardamom Whipped Cream

We’re mid-way through January and resolutions are in full swing.  Most people have a resolution that is health/fitness related.  I certainly do.  Believe it or not, in 2013 I want to:

1. Eat less sugar
2.  Keep up my work outs 3-5 times per week
3.  Be able to do 50 pushups without having to drop to my knees after 10

Not the loftiest of goals, but I’ll take it.  This doesn’t mean I’ll stop baking.  Nope.  In fact, last week I made a cake and a pie and today I made cookies (don’t worry I didn’t eat it all).  But I might to diversify my recipes to be a little more health conscious.

So for the sake of resolutions, here is a lighter (I say lighter, not light because whipped cream is not healthy) dessert.

It includes fruit, a bit of sugar, some spice, nuts and cream.  It’s all about balance after all right?

Roasted Pineapple with Cardamom Whipped Cream

1 pineapple, thinly sliced into rings
1/4 cup brown sugar
1 cup whipping cream
1/2 tsp cardamom
1/4 cup powdered sugar
1/2 tsp vanilla extract
1/4 cup chopped pecans (or other nuts)
Honey for drizzling

Pre-heat oven to 450F.

Slice pineapple and rub slices with brown sugar (about 1/2 tsp per slice).

Place on a parchment paper lined baking sheet and roast for 10 minutes.  Flip and roast for another 5-10 minutes or until golden.

In the meantime, make whipped cream.  Using a mixer, beat cream until it starts to foam and thicken,  add cardamom, sugar and vanilla and continue to beat until it forms firm peaks.  Set aside.

Once pineapple is done.  Allow to cool slightly.  Place a few slices on a plate top with a dollop of whipped cream, sprinkle with nuts (whichever you’d like.  I used pecans but I bet pistachios would be awesome), and drizzle with honey.  The whipped cream will melt a bit because the pineapple is hot.  Depending on the size of your pineapple and how thick your slices are this should serve about 10 people.

The beauty of this recipe is that it’s ok to NOT measure things.  It’s easy to scale up or down, just take however much pineapple you want, rub it with some sugar, roast it, serve it with whipped cream (or ice cream?!?!), sprinkle with nuts, drizzle with honey and BAM!  Quick and easy light dessert that will impress all.

Oven Not-Fried Pickles

A few weeks ago, I moved.  I think I told you about this but in case I didn’t… I moved.  Not far.  Just to the unit downstairs.  You’re probably thinking why go through all the trouble to move all your stuff down stairs?

Answer: For a patio.

You know what patios mean in Southern California? Outdoor space for dinner parties pretty much year round.  When you live in a studio, having people over is awkward.  Oh hey friend, why don’t you sit on my bed while I make you a cocktail and serve you a cheese platter?  Borderline creepy.

Now I have outdoor space where I can have people sit without being a creeper.  My most recent dinner venture was Southern themed.   I’ve never been to the South (well I don’t count Florida as the South.  Do you?) but here’s my south-inspired menu: Pulled Pork Sandwiches, Homemade Coleslaw, Baked Beans and Peanut Butter Cream Pie.

But what’s a dinner party without appetizers?

So in keeping with my Southern theme and the fact that my last impulse buy at the grocery store was a huge jar of pickles, I thought fried pickles might be the right choice.  The only issue is I hate frying things.  So crisis averted…

Oven Not-Fried Pickles

adapted from Skinny Taste

1 jar of pickles (I used dill oval cut chips)
1/2 cup bread crumbs
1/4 cup cornmeal
1/4 whole wheat flour
1 tsp cajun spice
pinch of salt
1 egg
2 tbsp milk

In a bowl combine breadcrumbs, cornmeal, flour, cajun spice and salt.

In another bowl beat together egg and milk.  Set aside.

Preheat oven to 450F.  Pat dry the pickles using a towel/paper towel.  Dip one into the egg mixture then toss in the breadcrumb mixture.  Place on a parchment paper lined baking sheet.  Repeat until all pickles are breaded (or you’re tired of doing this).

Bake 8-10 minutes, flip and bake another 5 minutes or until golden.

Serve hot with ketchup for dipping.

These were winners, but trust me on this.  They taste better when they’re hot… and with a cold beer… and preferably on a patio (not your bed… unless you’re into that kind of thing, in which case I’m not judging).

Green Soup: Broccoli-Spinach Soup with Yogurt

I’m a firm believer in balance.  Not like the yoga type.  I tried yoga, really I tried.  I just can’t do it.  I was thinking balance more in the dietary sense.

This weekend I went to the Taste of OC festival.  To say I ate a lot is probably the biggest understatement ever.  It was amazing.

Ribs. Fried Pig Ear.  Shrimp and Lobster Grinder. Italian Ice. Broken Banana Cream Pie. There were probably other things too.  I can’t remember since I was in food coma the second half of the afternoon.

Sometimes, you can only take so many rich, heavy dishes.  Sometimes you need something green, healthy, tangy and light that includes zero sugar.

Something like this:

Broccoli-Spinach Soup with Yogurt

1/2 tbsp olive oil
1/2 onion diced
2 cups broccoli, chopped

2 cups spinach
2 cups vegetable broth
1/2 cup non-fat greek yogurt
salt and pepper to taste
garbanzo beans, optional

In pot, heat oil and cook onions until translucent.  Add broth and bring to a boil.  Add broccoli and spinach and simmer for 3-4 minutes.  Remove from heat.  Allow to cool a little bit.  Using an immersion blender, puree until smooth.  Stir in greek yogurt and season to taste with salt and pepper.  Garnish with garbanzo beans if desired.

Serves 2 as a main dish or 4 as a side.

Easiest meal ever? Probably.

Tastiest? Pretty close.

I have no doubt in my mind I’ll be ready for an enormous meal soon (even though I think I’ve sworn off food festivals for all of eternity… or maybe just until the end of the month?).

In the meantime, I’ll stick to the green stuff for a bit.

Lemon Cornmeal Muffins

There are a few things I really appreciate in life.

1. My ten o’clock telenovela.  I’m into it.

2.  The fact that even though my friends are far away they can give me fashion advice thanks to my iphone.

I can’t be the only one that does this… right?

3. Lemon flavored anything. All the time.

Like these.

I love the texture, the lemon-y-ness, the simplicity.  Make them now.

Lemon Cornmeal Muffins

adapted from Epicurious

1 1/2 cups flour
1/3 cup cornmeal
2 tbsp cornstarch
3/4 cup sugar
1/2 tsp salt
1 tbsp + 1/2 tsp baking powder
1 cup buttermilk
2 eggs
zest of 2 lemons
1 tsp vanilla extract
1/2 cup butter (1 stick), melted
1 1/2 cups powdered sugar
juice of 1 lemon

Preheat oven to 350F.

Combine flour, cornmeal, cornstarch, sugar, salt and baking powder in a bowl.  In another bowl combine eggs, buttermilk, lemon zest, vanilla and melted butter.  Add wet ingredients to dry ingredients.  Stir until just combined.  Pour into lined muffin pan.  Bake 15-20 minutes or until cooked through.

While the muffins bake, make the glaze by combining powdered sugar and lemon juice.  Once the muffins are baked, remove from pan, place on a rack to cool.  While still hot, poke with a toothpick or fork and pour about 1 tbsp of glaze on each one.  Allow to cool completely and serve.

Then text your friends a picture of you eating one.  I would appreciate that.
