Super Saver Banana Pudding

Happy Derby Day!

Did you all watch the most exciting 2 minutes in sports?

I went to a Derby Day party.  In the spirit of southern hospitality, I brought banana pudding.

Banana Pudding

from all recipe Banana Pudding IV

8 oz cream cheese, room temperature
14oz can sweetened condensed milk
1 (50z) package vanilla instant pudding
3 cups cold milk
1 tsp vanilla extract
1 (80z) container whipped topping, thawed
3-4 sliced bananas
1 box Nilla wafers

Layer 9×13 dish with Nilla wafers.

Next add a layer of banana

Beat together cream cheese, condensed milk, pudding, vanilla and milk, then fold in the whipped topping.  Pour over the wafers and bananas.

Decorate with extra Nilla Wafers! Chill for a few hours!

I didn’t actually try this since the lactose intolerance has been acting up significantly lately.  I hope people liked it!  I thought it looked pretty at least.  I also got a work out hauling it to my friend’s house!

I should probably be going to bed, but really I just want to watch a movie and spoon… not gonna happen.

Bagels!

Happy Friday!

I wish I could be more excited that it’s the weekend but I have a ton of work to do.  However, tonight is the Grad Prom Ball!  I have a ridiculous bright yellow dress!  (Pictures to come)

Let’s back track to last night… After an intense class, I needed to bake.  Thus, Bagels…

2 kinds: Multi-grain and Cinnamon Raisin

For the multi-grain bagels, I used this recipe. For the cinnamon raisin bagels, I used my go to bagel recipe but added about a tablespoon of cinnamon and a box of raisins.

The cinnamon raisin looked prettier:

But the Multi-grain tasted amazing!

It is my mission to perfect these multi-grain bagels!  You may see them again in the near future!

Feels Like Spring!

Ahh another beautiful day here in Ithaca!

Look at that sunshine!  I know it sounds really stupid that I’m so excited about sunshine, but seriously it’s a treat here!  Flowers are blooming!

I spent the morning at the Farmer’s Market for the first time this year, since today was opening day!

I walked around and people/food watched.  Sadly, there wasn’t a whole lot of produce yet.  Mostly potatoes and carrots and such, but plenty of baked good!

Enjoyed a spinach ricotta crepe for brunch

Followed by a cup of unsweetened jasmine iced tea.  Amazing.

Played with my new friend, Koda

Isn’t she adorable!?!?  I met her yesterday on campus and ran into her at the Farmer’s Market.  I want one!

Chatted with friends

Overall had an amazing day! I’m not sure if it’s just the sunshine and warmth but I’m feeling a lot better about life.  It’s crazy how little things can really add up.

I hate April Fool’s Day!  Sorry to be a scrooge (what? wrong holiday?), but I won’t even pretend to be pregnant or dropping out of school or anything of that shocking sort.  Are you a fan of April Fool’s Day??

Today has starting out wonderfully!!

Reason #1: It’s SUNNY out and there is going to be a high of 78!!!!

Reason #2: Amazing oats in my new bowl! Isn’t it cute?

My oats may not be as fancy as some, but my oat + banana +yogurt + almond butter combo is the best thing on Earth to me!  Case in point:

Reason #3:  Delicious lunch!

At Allie‘s suggestion I had a tempeh + pumpkin butter + spinach sandwich.  Yes there is tempeh and pumpkin butter amongst that mountain of spinach.

OMG delicious!  Try it!  Even better than yesterday’s sandwich!

Reason #4: Yesterday I got Mad Men season 3 arrived in the mail.  Thus I can continue my love/hate relationship with Don Draper.

Reason #5: Class was outside today!  I got to argue with someone, which is fun because usually it’s a huge group of people sitting around agreeing with each other.

Reason #6: Fantastic work out this morning!  It flew by!  I did 4 miles on the T-Mill while watching Tyra Banks’ E! True Hollywood Story.  I love trash TV!

So I’m posting this later than expected but today has been a great day so far!  To be honest, I’m not sure how much work I’m going to get done the rest of the day, but I’m a happy camper!

It’s Rarely Sunny in Upstate NY

Today we had sunshine!  It was great!

The fella and I took advantage of the sunshine for a little drive upstate to Rochester.  You’re probably wondering why on Earth anyone would go to Rochester, right?  It was actually a lot more fun than I thought!

We started with a scenic drive along Cayuga Lake:

Once in Rochester went to the George Eastman House, International Museum of Photography and Film:

For some reason I thought the bathroom was super cool….

And what good food blogger wouldn’t take pictures of fake cookies in the study…

Once we had seen the extent of the museum and house, we walked around outside and had a mini photoshoot:

By this time, I was ready to gnaw my arm off.  The fella had a hankering for BBQ, thus…

Apparently it’s an Upstate NY institution?

What does a non-meat eater get at a BBQ joint?  Fried Green Tomatoes and a Smoked Veggie Sandwich!  Unfortunately I was so hungry I forgot to take a picture of the deliciousness!  Trust me, it was deeeelissh!!

After lunch/dinner (dunch?) we headed to the shores of Lake Ontario!

I hate the beach…

But we had a lovely time!

Now we’re back! I better hurry up and hit Publish because the fella has been dying to watch New Moon all day! :p

Lemon Cake filled with Creamy Goodness

I slept in til noon!  Isn’t that ridiculous!?!  Well maybe not for some, but for someone who rarely wakes up past 7:00am, it’s a miracle!  I must have been pooped from the weekend!  Sadly, I woke up with a sore throat and an overall gross/sore/tired feeling (I consumed several cups of echinacea tea  throughout the day to feel better… not working yet…).

So I lounged around most of the day and read blogs, as promised.  I also watched Pride and Prejudice and proceeded to cry my eyes out.  That movie gets me every time!  Love it!  After a full day of doing nothing, I started to get pretty bored, so naturally I decided to bake, because let’s face it, I would.

Lemon Cake

adapted from Raspberry Laced Vanilla Cake

1 1/2 cup cake flour
1/4 tsp salt
1/2 tbsp baking powder
1/4 tsp baking soda
3/4 cup butter, softened
1/2 cup + 2 tbsp sugar
1/3 cup lemon juice (or juice of 1 lemon plus enough water/milk to make 1/3 cup)
zest of 1 lemon
1 tsp vanilla
2 eggs


Preheat oven to 350 degrees.

Cream together butter and sugar.  Zest lemon and add to mixture, add lemon juice/water/milk, vanilla, eggs and beat for a few seconds til combined.  Add flour, baking soda, baking powder, salt and beat together until combined.

Pour dough into 2 9 inch cake pans (greased and floured), or cupcake pans, or mini loaf pans or whatever other shape (I used mini heart shaped pans).  I baked my heart shaped pans for 15 mins, for a larger cake you’ll probably need about half an hour.

Before or after, make the custard filling.

Homemade Vanilla Custard

adapted from Joy the Baker’s PB Banana Cream Pie

1 1/2 cups milk
1 tsp vanilla
3 egg yolks
1/3 cup sugar
3 tbsp corn starch
pinch of salt

Heat milk and vanilla in a sauce pan on low heat to prevent burning (stir occasionally).  In the meantime, in a bowl mix together egg yolks, sugar, cornstarch and salt.  Once the milk starts to simmer, stir in a small amount (about 1/3 cup should be fine) of the milk to your egg mixture.  Then add the egg mixture to the rest of your milk.  Stir constantly for about 5-10 minutes until thick.  Put in a bowl and cover with plastic wrap (lay plastic wrap on the custard to keep it from forming a weird film/skin/hardened layer) and chill in the fridge.

Super Fruit Buttercream Frosting

1/2 cup butter (1 stick), softened
1/2 cup Crofter’s Super Fruit spread (I used the South America Flavor, but any type of jam, especially raspberry would be delicious)
~3 cups powdered sugar

For the frosting, cream together the butter and fruit spread, gradually add powdered sugar until you get your desired consistency.

In addition the the Super Fruit Buttercream, I made a traditional buttercream with just butter, powdered sugar, vanilla and milk.

To assemble the mini cakes (once cakes have cooled), level off the top of each mini cake (or each big cake if you used 9 inch round pans), spread a layer of fruit spread (suggest you microwave it for a few seconds for easy spreading), then a thick-ish layer of custard and press on the second cake layer (repeat if you want to do more than 2 layers).

One of these will go to the fella.  The other three plus the 4 cupcakes are up for grabs.

Well I guess that sufficiently entertained me for a few hours and also made good use of leftovers (had some egg yolks left over from an omelet and milk left over from Pi Day).

These probably would have been a good idea for Valentine’s Day.  Oh well!

Concrete Jungle Where Dreams Are Made Of

Hi all!

I’m back!  NYC was great!  I’ll give a short photo recap of the happenings.  I took pictures of some meals, not all (since most people in my program don’t know I have a food blog… sort of embarrassing… oh well).

The trip started off Thursday (after a 5 hr bus ride) at the Brooklyn Army Terminal…

Where we got a tour on a NYC Water Taxi.

It was amazing!  We talked about maritime transport (because planner worry about these things…)

and infrastructure

and the other New York type things…

Then we headed to our hotel and to a reception with other Cornell Alums at Rockefeller Center.  Wine and appetizers were enjoyed… delicious! Then there was an unphotographed night of enjoyment (may have had a little too much wine…).

The next morning, I got up bright and early and headed to Balthazar Bakery for breakfast, where I got the most amazing asparagus, mushroom and cheese croissant and some pretty tasty coffee:

My friend, Celia, got a chocolate croissant.

Looked amazing as well.  After that we headed up to Harlem for a tour of Harlem.  Awesome looking outdoor grocery store (perfect for my food systems planning interest)

and on our lunch break I got a mango with lime, salt and chile!

Sooo delicous!  They’re better in LA but this was great after not having had one in so long!  Actual lunch was unpictured “soul food”… Collard greens, rice and beans and plantains… soo good!

Then we headed to the High line, which is basically every planner’s dream.  It’s an old rail line that was converted into public space.  Pretty cool in my opinion.

Then some more walking around, over to Battery Park and the Irish Hunger Memorial (no idea this existed)

and finally ground zero.  The night ended with a broadway show: Fela!

I was thoroughly entertained.  Great African booty shaking and an interesting message (kind of sad at times).  Definitely recommend it, although I know not everyone liked it. After the show there was fun-ness with friends.

Saturday, we headed back to Ithaca at noon.  I had a fun time!  It was nice to hang out with my CRP friends and not have to worry about school work.  Spring break starts now!  So excited to do absolutely nothing!

Tomorrow will be spend lounging, catching up on blog reading, maybe baking and potentially watching the Cornell basketball game with some friends.

Pies Galore!

Happy Pi(e) day!

My department had a pie contest!  I made Peanut Butter Banana Cream pie!

Graham cracker crust.

Layer of dark chocolate.

Layer of Peanut Butter.

Layer of homemade vanilla custard mixed with fresh sliced bananas.

Topped with real whipped cream.

How can you go wrong with PB, Chocolate AND Banana all in one delicious pie!?!?!

I thought it was pretty darn delicious!  I think others liked it too!

I’m not sure who won 😦 I left early to work on my fitness (…Fergie style…), busted out 4 miles on the treadmill and 20mins (I think… short term memory loss I guess…) on the elliptical.  It was great!

Seriously folks, I am all sugared out.  I hadn’t really consumed any refined sugar all week and this weekend I had a ton.  I literally feel a bit ill. Cooling it on the sugar as usual!

So today I was procrastinating and looking at old posts and I realized that it probably seems like I eat a lot of junk.  Haha! I promise, I actually don’t!  Well, I eat a fair amount of sweets but I like to balance it out with vegetables and other healthy eats!

For example, for breakfast today I had a green monster and an egg white omelet:

4 egg whites… the custard in the pie required four egg yolks… No point in throwing the whites away!

For dinner, bok choy, leeks and scallions stir fried in some coconut oil and Ponzu with a Boca patty!  Sooooooo Soooo Soooooo good!  I wanted more! Also had a pear!

Just so you don’t think my hot bod comes from cookies alone… I eat vegetables 🙂  A lot actually!

Just thought I would clarify that!

Ugh tomorrow is Monday… but Thursday is the start of spring break with a class trip to NYC!  WOO!  Then a whole week off!!  And I’ll be seeing the lovely fella AGAIN!  We may or may not go on a mini road trip… any spring break plans for you?  Has spring break already passed for everyone??

Best Salad Ever

This morning, I did something I haven’t done in a LOOOOONNNGGG time…

This made my 3 mile treadmill jaunt AMAZING!  I wanted to keep going but had to leave to get ready for class!

As promised… Here is the Best Salad Ever!

That’s it!!  Just kidding….

Chop up some romaine.  If you’re eating at home, put it in a large bowl.  If you’re taking it to go, cool whip containers work… great conversation starter too!

Add your desired veggie toppings: cucumbers, carrot ribbons and artichoke hearts (ideally this would have tomatoes and bell peppers but I’m out of those)

Add your protein:  1 chopped up string cheese and 1 chopped up veggie patty

And finally… the best part… Barley!!

Remember my obsession with Annie’s Buttermilk Dressing?? I found a homemade replacement!  Prepare to be amazed…

Creamy Lemon Tahini Dressing

adapted from Culinate’s Lemon-Tahini Dressing

2 tbsp tahini
2 tbsp water
juice of 1 lemon
1 clove of garlic, minced
3/4 cup greek yogurt (any fat should work, I used nonfat)
dash of cumin
few shakes of paprika
few shakes of cayenne
sea salt to taste

Combine all the ingredients and be prepared for deliciousness!  Play around with the spices til you find what tastes best to you!

I pack mine in an old garlic container.  No need for fancy tupperware here!

I almost wouldn’t call this a salad!  It’s just intense and delicious!
