My Neighbor is Awesome!

The past few days have been filled with work.  While I’ve managed to get a lot done, my fridge is looking pretty bare.  Consequently, I’ve been eating a lot grains and random frozen vegetables left over.

Just in time to save the day, my neighbor (who we lovingly call Slick Rick) invited a few friends over for dinner. He had an amazing spread of vegetables to grill.

Ladies, he’s single (I think…)  🙂

I contributed a less than exciting salad compared to all the grilled goodies.

Now I’m stuffed and ready for bed.  Next week, I’m making the neighbors dinner!  What should I make?  I feel like it has to be amazing too!  Suggestions?

Bagels!

Happy Friday!

I wish I could be more excited that it’s the weekend but I have a ton of work to do.  However, tonight is the Grad Prom Ball!  I have a ridiculous bright yellow dress!  (Pictures to come)

Let’s back track to last night… After an intense class, I needed to bake.  Thus, Bagels…

2 kinds: Multi-grain and Cinnamon Raisin

For the multi-grain bagels, I used this recipe. For the cinnamon raisin bagels, I used my go to bagel recipe but added about a tablespoon of cinnamon and a box of raisins.

The cinnamon raisin looked prettier:

But the Multi-grain tasted amazing!

It is my mission to perfect these multi-grain bagels!  You may see them again in the near future!

No Go…

I spent the better part of my day avoiding work.  I’m not sure what’s wrong with me.  Usually on Mondays I’m ready to go, but today was a no go!

I woke up at 6:30am hoping to be at the gym by the time it opened at 7:00am.  Didn’t end up getting there til 7:30am.  Intended to spend 45 minutes on the treadmill doing a variety of intervals.  Ended up doing 22 mins on the treadmill and 23 minutes on the elliptical.  Not feeling the gym today.

After the gym, I got ready for class, lost track of time, missed a few buses and never made it to class… instead I went to the library where I attempted to read only to end up taking a nap! What’s wrong with me?!?

I was definitely feeling a little off today.

When I got home this evening, I decided dinner and cooking would cheer me up.  I enjoyed two bowls of homemade black bean soup with greek yogurt mixed in.

I also made some pasta sauce.

They were an experiment, not sure they were good enough to post the recipe.

Then I took an almost 2 hour nap…

I need Monday to be over.  I’m ready for bed.

My goal for tomorrow is to smile at least 10 times and get work done!  Who’s with me?

Peanut Butter Banana Cupcakes

Hellooo everyone!  Thanks for your great comments on my last post about weight!  I appreciate the understanding!

In other news, I was super please this morning to find that my panini post made the Food Buzz Top 9!

Today felt like a ridiculously unproductive day.  Yesterday I went to the library from 10am until about 5:30 and managed to bust out almost 1400 words of my paper (needs to be 2,500-3,000).  Today after class, I went to the library hoping to bust out the rest of the paper but only ended up writing about 300 more words.  It was just NOT happening!  So instead I just went home, where I proceeded to snack for a good while (probably a consequence of my scant lunch.  I was too lazy to make lunch this morning so I packet a pear, a luna bar, 1/2 cup of edamame, a carrot and some sliced cucumber.  Not substantial enough.  I need a full meal!  Lesson learned, won’t happen again.)

In my unproductiveness, I decided to bake for a friend who is in need of a sweet treat.  I was feeling creative so here’s my creation:

Peanut Butter Banana Cupcakes with Chocolate PB Icing

inspired by Voracious Vegan’s Ultimate Peanut Butter Cup Cake

1 1/2 ripe bananas, mashed
1/2 cup sugar
1/4 cup natural peanut butter
1 tsp vanilla
1 1/2 cups flour (I used half whole wheat)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup + a little more milk (to make this recipe vegan, use soy/hemp/almond/other non-dairy milk)

Preheat oven to 350 degrees.  Combine bananas, sugar, PB and vanilla in a large bowl.  Add flour, baking soda, baking powder and salt.  As you combine, gradually pour in the milk until well combined.  Pour into lined cupcake pan and bake for 15-20 minutes (mine required 17 mins in the oven).   Allow cupcakes to cool completely and frost with PB Chocolate Icing.

Chocolate Peanut Butter Sticky Icing

inspired by Pioneer Woman’s Sticky Chocolate Icing

1/4 cup sweetened condensed milk
2 ounces of dark chocolate
1 tbsp peanut butter

Heat together in a sauce pan, stirring until all ingredients are well combined.  Spoon onto cupcakes and spread.

These should probably be enjoyed with a large glass of milk or warm cup of coffee.  The sweetness is crazyyy!  Sort of wish they were a little more peanut buttery!  Oh well, next time I’ll add more!

I’m hoping to get more done tonight.  Not sure to what extent it’ll happen though.  Just need to pull through til Thursday!  I can do it!  Wish me luck!  Have a lovely night!

Splurging at the Grocery Store

It’s the weekend!!!! Woo!  Too bad I have a ton to do this weekend!  Oh well! It’ll all get done!

Today I was in desperate need of going to the grocery store.  Luckily, I was provided with lunch on campus today (delish veggie pizza and salad!) because I literally had no fresh produce, which is a deal breaker for me.

So I went to the grocery store and spent tons of $$.  I’ve realized I buy expensive things.  I go through about 1 large container of greek yogurt per week which costs about $7.99.  About 2 bags of spinach and 1 bag of romaine hearts and then I usually choose a few “exciting splurges.”  For me, exciting splurges are fruits of vegetables that aren’t cheap (usually over $3/lb).

Last week’s exciting splurge was a cantaloupe.  This week’s exciting splurge is a bag of colorful pepper and some mushrooms!

Do you splurge on expensive produce?  Do you consider it a splurge even since it’s healthy?

So delicious!  I had some dinner!

Broccoli and Yellow Pepper Stir Fry

Along with a can of soup since it was a cold day (we had a high of 45degrees! Yesterday the high was 80 degrees! What’s up with the weather??)

I also baked the most disappointing muffins ever tonight.

Omm… why were they salty?  Not expected.  They would probably taste good with chili but I was expecting something sweet. I’m a little disappointed…

Quinoa Granola

Breakfast this morning was inspired by Heather.  A few days ago I saw her post on quinoa granola and after yesterday’s quinoa breakfast, I knew I had to try it ASAP!

I had mind with greek yogurt and a sliced banana.

Seriously. Best homemade breakfast I’ve ever had!  That’s saying a lot!

I tweeked her version a bit. Here’s my recipe for a single serving:

Coconut Quinoa Granola

inspired by Quinoa Granola

1/4 cup uncooked quinoa
1 tbsp flax
1 tbsp unsweetened coconut
1 tbsp agave
cinnamon

Rinse the quinoa.  Combine all the ingredients and spread on a baking sheet.  Bake at 375 degrees for 10-15 mins, stirring occasionally.

This was all sorts of delicious!  The whole meal also had about 20g of protein!  Kept me full for a pretty long time (5 hours?).

Definitely recommend it.

I hate April Fool’s Day!  Sorry to be a scrooge (what? wrong holiday?), but I won’t even pretend to be pregnant or dropping out of school or anything of that shocking sort.  Are you a fan of April Fool’s Day??

Today has starting out wonderfully!!

Reason #1: It’s SUNNY out and there is going to be a high of 78!!!!

Reason #2: Amazing oats in my new bowl! Isn’t it cute?

My oats may not be as fancy as some, but my oat + banana +yogurt + almond butter combo is the best thing on Earth to me!  Case in point:

Reason #3:  Delicious lunch!

At Allie‘s suggestion I had a tempeh + pumpkin butter + spinach sandwich.  Yes there is tempeh and pumpkin butter amongst that mountain of spinach.

OMG delicious!  Try it!  Even better than yesterday’s sandwich!

Reason #4: Yesterday I got Mad Men season 3 arrived in the mail.  Thus I can continue my love/hate relationship with Don Draper.

Reason #5: Class was outside today!  I got to argue with someone, which is fun because usually it’s a huge group of people sitting around agreeing with each other.

Reason #6: Fantastic work out this morning!  It flew by!  I did 4 miles on the T-Mill while watching Tyra Banks’ E! True Hollywood Story.  I love trash TV!

So I’m posting this later than expected but today has been a great day so far!  To be honest, I’m not sure how much work I’m going to get done the rest of the day, but I’m a happy camper!

Let’s Go Streaking!

Ok actually you can and should do this with your clothes on!

My brother-in-law started a fun facebook group called The Running Streak Group.

Basically the idea is to run (at least) 1 mile everyday, never missing a day.  You can see the United States Running Streak Association for more info!

Starting April 1st, I’m going to try to run at least 1 mile everyday!  Sounds kind of fun right?  Anyone want to join me?  Feel free to join the facebook group!  Good way to make sure you get moving at least a little bit everyday!

I wish I had more exciting eats to show you all, but unfortunately I’ve been running around like a chicken with its head cut off for the past few days!   I’m trying to get together school work, apply for internships and be the overall rockstar that I am!

This morning I made a green monster for breakfast and in my rush out the door, forgot it.  That was upsetting… luckily I wasn’t hungry this morning.

But I’m pretty excited for lunch. I’m trying something new!

In other news, my Stress-Less March idea is working really well.  While it sucks to have to take everything with me and lug it around campus all day, it’s really nice to get so much done and come home and sort of relax for a bit.

I Have Bad Taste in Music but…

Have you ever noticed that “small talk” usually refers to talking about the weather, music, books and movies?

Whenever someone asks me what kind of music I listen to I usually tense up.  A typical young adult conversation goes something like this:

Person 1: What kind of music do you listen to?

Person 2: Oh a little bit of everything… (at this point the person is being polite but eagerly anticipating spouting off a list of the great)

Person 1: What are some of your favorites?

Person 2: Well, Radiohead, The Beatles, Bob Dylan, Pink Floyd… (note: if you’re talking to a hipster you’ll probably get some obscure band in there and maybe a Le Tigre or Rilo Kiley).

Person 1: Awesome, I love Radiohead.

That’s not really how it happens for me.  Usually, I avoid that question at all costs by turning it around and asking what they listen to, because let’s be realistic no one wants to hear that your favorites are Beyonce and Shakira.  Should you dare to admit which ones you actually like, you are bound to be met with a confused glare and an undoubted perceptive drop in IQ in the mind of the asker (the exception to this being foreign pop… if you like that, you’re golden.  Thank God for Juanes).

So while my musical taste may be abysmal, I feel that I have two redeeming qualities: movies and baking.

I like my fair share of ridiculous movies (ahem… New Moon… *cough*), but I like Wes Anderson movies as much as the next person and thought Raging Bull was great! I feel that I can adequately have a semi-productive conversation with a “movie snob.”

My other redeeming quality…

Blueberry Coconut Oat Muffins with Maple Oat Topping

1/2 cup apple sauce
1/2 a small banana mashed
2 1/2 tbsp almond butter
1 egg
1/3 cup agave nectar
1/2 cup whole wheat pastry flour
1/2 cup all purpose flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup wheat germ
1/2 cup rolled oats
1/2 cup unsweetened coconut
1/2 fresh or frozen blueberries
splash of milk, water or juice if batter too firm (I added about 1/4 cup)

Preheat oven to 350degrees. Combine all the wet ingredients in a bowl.  Add the dry ingredients (fold in blueberries at the end). Fill greased muffin pan with batter (about half full), top with crunchy maple oat topping (recipe below).  Bake for 20-25 minutes depending on strength of your oven. (Note: you can veganify them by adding an extra 1/4 cup of applesauce or another half of banana instead of the egg)

Crunchy Maple Oat Topping

2 tbsp flour
1/4 cup oats
1/2 tbps coconut oil
1 1/2 tbsp maple syrup

Mix together with your fingers to get a crumbly topping.

I may not know everything there is to know about “good” music, but I can make a hell of a muffin from scratch!

Not to mention they’re low fat and pretty healthy as far as muffins go.

Stew in a Jar

Food bloggers are weird.

We take pictures of food…

Have an unnatural obsession with strange health foods (I mean who else really eats Chia seeds…)

We get super excited about new jars of nut butter…

and even more excited when the jar is empty so we can have oats in a jar.

Now, you can have another reason to get excited about an empty jar of peanut butter: Stew in a Jar

Stew in a Jar

1 tsp coconut oil or olive oil
1/2 onion, diced
2 tomatoes, diced (or a small can of diced tomatoes)
1 carrot, chopped
1 celery rib, chopped
1 garlic clove, minced
1 sweet potato, diced
1/2 tsp curry powder
2 shakes of cinnamon
Cayenne to taste
3 shakes of paprika
1-2 cups water or vegetable broth
salt and pepper to taste
1 nearly empty jar of natural peanut butter (or just a spoonful of peanut butter)

Heat the oil, add all ingredients onions, garlic, celery and carrots.  Cook til onions are translucent, add tomatoes, sweet potato and spices and stir.  Add water or broth, bring to a boil and simmer for 20 minutes.  Spoon stew into nearly empty PB jar.  Stir and enjoy!  Serves 2-3.

Pretty delicious!  Definitely making this again!

I feel like I’m so close to the end!  Today I was in the library from 11:00am til 5:00pm with a short break for a 1 hr class (which I ended up cutting short…) and a 20 min nap.  Got a lot done though!

In the next hour, I hope to:
-Wrap up my econ paper: I’m doing an economic analysis of the Proposed NY State Beverage Tax!
-Finish 1/4 of a question and rewrite my econ take home midterm… I can draw a mean indifference curve!
-Do the dishes!
