Fake It Til You Make It

I have two fakers here today and both are good for the environment and my tummy!

Faker #1: Chicken Parmesan for Lunch

1 Morningstar Chicken Patty, some pasta sauce, and mozzarella cheese.  Faux-Chicken Parmesan!  Delicous and meat-free!  I love being home for lunch and making more exciting meals, not that Cliff bars and frozen vegetables aren’t great but I much prefer an exciting lunch.  Do you prefer quick, light lunches? or elaborate lunches?

Faker #2: Paper Cup

It’s not paper!  It’s a ceramic reusable travel mug!  Kind of fun and environmentally friendly, right!?!

Speaking of paper… My paper is almost done!  I’m putting the finishing touches on my bibliography!  Thank goodness!!

Interesting Find

I went to Target last night, thinking I wanted a pretty new plate (I won’t get into my obsession with dishes and flatware…).  Then I remember Erin‘s post about Binge Spending and though I probably shouldn’t buy this since I don’t actually need it.  So I was going to walk about empty handed, but on my way out I saw an interesting thing in the refrigerated section…

Double Twisted String Cheese!

Okay so it’s tastes pretty much like regular string cheese, but it makes snacks that much more fun!  I’m a nerd… I know!

Portabella Stuffed with Quinoa, Apples and Cranberries

Since as earlier mentioned, lunch was ridiculously boring.  I tried to get a little creative with dinner.

First, I cooked some Portabella Mushrooms in a pan with some salt, pepper and olive oil.  To prevent them from sticking and burning I added a little bit of brine from my artichokes since I was out of vegetable broth.

Then I put those aside, sauteed some apples, added some cooked quinoa and dried cranberries.  I cooked those together for a few minutes with some apple cider for moisture (you could probably use juice or water too).

Then I piled the mixture onto the Portabella and enjoyed!

The lovely fella decided to add some shredded mozzarella to his.

Quick and Easy!  Pretty Tasty too!

Ready For Winter

After an extremely long day, I came home to find a package on my doorstep.  My snow boots arrived!  (excuse my ridiculously messy room and haggard appearance, I slept a little less than 4 hours last night…)

I’m really pleased!  I’ve never had snow boots before (I’m a California girl, remember!).  I kind of can’t wait for it so snow so I can wear them.  I’m ready for winter!

Last Day of Class

It’s the last day of class!  Thank goodness!

I pretty much stayed up all night (actually went to bed at 4am woke up at 7am… so I had a nap).  I won’t even tell you all the things I ate last night.  I was all sorts of disgusting!

On to a happier day…

Breakfast was one of my favorites!  I’m not sure how I’ve not had this for so long!

I didn’t have any toast so I used a Mini Pita, spread some PB (with flax!) on it and sliced up a banana!  Yum!  I have a slight banana obsession!  I think it runs in the family.  My mom eats multiple bananas per day.

What yours favorite breakfast?

Sad/Happy Story: I was up pretty much all night working on this paper that I’ve been obsessing over for weeks.  I couldn’t figure out why I kept writing but I seemed to ways have 10-11 pages… then I realized, most of it was actually in 10pt font!  So REALLY I had 17 pages!  Amazing!

Lunch with probably be an apple, a carrot and a cliff bar again… hopefully dinner will make up in amazingness!

Raw vs Roasted

Almond Butter

It’s pretty delicious.  Last week, I was talking to a friend about almond butter, our favorite brands, cost, deliciousness, etc. He said he prefers raw almond butter.  So when I stopped by Trader Joe’s on my way home from Thanksgiving, I got a jar of raw almond butter to see which one I liked better.

I think I like the regular roasted Almond Butter better.  I mean they both obviously taste like almonds but the roasted one is smoother and has a more distinct taste. 

Are there any health benefits to eating it raw vs roasted?  Which do you prefer?

December Recipe Challenge: Vegetarian Borscht

Today is day 1 of the December Recipe Challenge.

Since it was snowing when I went to class this morning, I decided upon something hot, delicious and FULL OF VEGETABLES!

I came across this recipe a few days ago and was instantly inspired!

Vegetarian Borscht

Inspired by Mostly Soup
1 Small Onion
1 tsp minced garlic (2 cloves)
1 Pound Beets (peeled and shredded)
1/2 lb carrots (shredded)
1 medium potato
1/2 cabbage (thinly sliced)
2 tbsp Olive Oil
4 cups of vegetable broth
Salt and Pepper to Taste
Lemon
Sour Cream (optional)

Gather all your ingredients:

Wash your veggies, peel your beets…

Use a handy dandy food processor to easily shred everything

Then heat the oil, add the onions and garlic with some salt and pepper.  Sautee them for about 2 minutes.

Add the beets, carrots, and potato.  Cook for about 5 minutes.  In the mean time, heat up your vegetable broth.  When you slice your cabbage, don’t use a crappy knife… it sucks.

Add the vegetable broth and cabbage.  Simmer for 20-30 minutes.  Then add the juice of 1 lemon.

Serve with a dollop of sour cream and enjoy!  I had it with a slice of pumpernickel toast!  Mmm!

That was super fun to make!  It also helped that the lovely fella was there to take pictures and do the dishes!  I can’t wait to make another fun/healthy recipe!

Can you believe it’s already December 1st!?!  Where did time go?!?

It’s already the last week of classes, which means I have a 6368299490063357100 million things due in the next two weeks.

I woke up this morning, wrote a bit more of my paper and flat out didn’t feel like making anything.  So for breakfast I had a DELICIOUS Green Monster.

I finally decided I should probably pack a lunch, being that it’s a long day (but the second to last long day!!!)

I took the lazy route…  Kind of boring so dinner needs to be AMAZING! and  cooked by the lovely fella.

What Causes Food Insecurity: Part III

In case you missed it, I posted Part I and Part II earlier, covering some of the causes of low food stocks.  This is yet another part of the low food stocks causes of food insecurity: biofuels

A common criticism of US corn subsidies (and sometimes dairy subsidies in Europe) is that overproduction of food in developed countries caused a surplus of cheap food that was dumped in developing nations undercutting the agricultural production of local producers.  However, the emphasis on biofuels and alternative energy forms shifted the purpose of production of certain commodities from food to fuel.

Tax credits and other subsidies have “succeeded in diverting about one third of the US corn crop to ethanol production and perhaps a similar amount of EU rapeseed to biodiesel.”[1] These incentives increase the demand for biofuels and as a result increase the demand for agricultural products needed to produce biofuels such as corn in the United States and sugar cane and soybeans in other ethanol producing nations.  According to the argument that food is used for fuel, land that would be used for food production for human consumption has been converted to food production for energy.

In the US, federal law encourages biofuels production by mandating that a ten percent blend of ethanol in every gallon of gasoline.[2] Corn production for biofuels is further encouraged by a tax credit of $0.45 per gallon of blended fuel (as of January 1, 2009, down from $0.51/gallon).  One further policy encouragement of corn production for fuel is a $0.59 per gallon tariff on imported ethanol (down from $2.00 per gallon prior to 2009). The tariff, coupled with the subsidy for ethanol production, makes corn ethanol more competitive in the US market, when it would not necessarily be without the government assistance.  These government policies encourage the production of corn to produce biofuels, even if corn is not the most efficient input for ethanol production (which a lot of research shows it’s not).

While corn and US subsidies are the largest target of the food for fuel argument, a similar argument can be applied to other ethanol producing nations such as Brazil.  As a result of increased demand for food products (i.e. corn, sugar cane, soy beans) to be used for alternative energy forms, the price of those commodities increases. It is argued that this drives up the cost of food as less food for human consumption will be produced causing the price to increase.  While the effects of biofuel production is still uncertain, It is generally accepted that the price of corn has increased, even by defenders of corn ethanol production such as former US Senator Tom Daschle, although he claims that consumers have not incurred the cost of these price increases despite the fact that the majority of corn produced in the United States is used to feed livestock.[3] Daschle’s point about the use of corn to feed livestock brings up another aspect of the demand side of the food price question.

Quick, Healthy and Delicious

I came home from the gym today and for some reason wasn’t hungry at all.  After almost two hours, I decided I should probably eat something even though I wasn’t too hungry.  Do you ever have those days where you’re just not really hungry?? I wish they would happen more often.

I looked around the kitchen for what to make and the lovely fella suggested I make a wrap.

So I spread some greek yogurt on a wrap, topped it with a layer of spinach, artichoke hearts, mustard and a Morningstar Tomato Basil Pizza Burger.

Then I wrapped it up and enjoyed!  It was DELICIOUS and literally took 3 minutes to make (and probably just as much time to eat).  I’m seriously obsessed with Morningstar Farms Veggie Patties.  I should be their spokes person.  I feel like I rep for them all the time!

In other news… one massive jar of artichokes down, one more to go.  I give in another 48 hours.

Students at Lincoln University with a body mass index of 30 or above, reflective of obesity, must take a fitness course that meets three hours per week. Those who are assigned to the class but do not complete it cannot graduate.
